Buttery Acorn Squash and Apples Recipe
Ingredients
| Unsalted butter | 3 Tablespoon | |
| Sugar | 3 Tablespoon | |
| Ground cinnamon | 1/8 Teaspoon | |
| Ground allspice | 1/8 Teaspoon | |
| Salt | 1/8 Teaspoon | |
| 1 medium acorn squash, seeded and cut into 1-inch chunks | ||
| 1 medium apple, cored and cut into 1/4-inch rings | ||
Directions
1. Heat oven to 375°F. Line a jelly-roll pan with foil.
2. Combine butter and jam in a large bowl and microwave until melted, 15 to 20 seconds. Stir and cook 5 to 10 seconds longer, if necessary. Stir in cinnamon, allspice, and salt. Add squash; stir gently with a rubber spatula until well coated.
3. Transfer squash to pan and bake 30 minutes. Add apple rings to butter mixture and combine. Add to pan; stir to combine with squash. Bake until squash and apple rings are tender, 15 to 20 minutes longer.
