1.5 cups packed dark brown sugar
2 Tbs unsalted butter
3 Tbs cornstarch
4 cups milk, divided (whole or 2%)
1/4 tsp salt
4 eggs beaten
Directions
melt butter and sugar over low heat in a medium pan. Turn heat to high and cook until bubbly.
Add 3 cups milk, stirring to melt any hardened sugar. Cook for 5 mins. Combine cornstarch and remaining
1 cup milk to make a paste and stir in. Cook until mixture starts to thicken, about 6-8 mins. Add salt. Add a little
bit of hot mixture to eggs, stirring and a little more, stirring to warm eggs. Add eggs to hot mixture and
whisk constantly. Bring to a boil and continue to cook about 5 mins more until mixture thickens. Pour
into individual ramekins and refrigerate until chilled. Serve with whipped cream if desired.

Puddings are my favorite but I always find my way around baking them at home. But when I saw this recipe I was so happy because finally there was a homemade butterscotch pudding recipe which did no ask for baking. So perfect for amateur chefs like me.
