Butternut Squash Recipe
Simply delicious Butternut Squash Soup recipe with ginger & lemon flavors.
Ingredients
1/2 c. finely chopped onion
1 1/2 tbsp. minced fresh ginger root
3 tbsp. unsalted butter
4 c. butternut squash
2 c. canned chicken broth
3 garlic cloves
2 tbsp. fresh lime juice, or to taste
1/3 c. vegetable oil
3 tbsp julienne peeled fresh ginger root
Directions
Cook onions & ginger roots in butter in a sauce pan,be careful not to burn the onions.Once the onions become soft,add butternut squash(peeled & seeded),chicken broth,water & garlic.Bring the mix to a boil,cover it & let it simmer for atleast 15 mintues.Once the butternut squash are tender,churn the mixture in a blender.Once that is done put the mix in a pan & bring to a boil.Add lemon juice salt to taste & pepper.Let it simmer for sometime before you serve.
Garnish with ginger root before you serve it.
Serve it hot
