Ingredients

 
3/4 cup stoneground corn meal
 
1 cup all purpose bread flour (unbleached)
 
1 tsp baking powder
 
1/4 tsp baking soad
 
1 tsp salt
 
1/4 cup sugar
 
1/4 cup oil
 
1 egg, beaten
 
1 cup buttermilk
 
2 Tbs butter

Directions

Combine dry ingredients, sifting together if lumpy
beat egg and add oil and buttermilk add to dry ingredients
melt butter in cast iron pan and when bubbling add batter
place on middle rack in oven and bake 20-25 mins until done
cool for 5 mins on wire rack and slice into wedges
serve warm

This is my favorite skillet buttermilk cornbread recipe as it is one of the simplest that I have come across. If you like cornbread then you must try this recipe. I really like the neatness of Maria's bread and it comes out every time like this; the good taste and texture just adds more to it.
