Buttermilk Potato Salad Recipe
If you though potato salas is not all a healthy choice, this Buttermilk Potato Salad begs to differ! A great blend of herbs and potatoes in buttermilk. This Buttermilk Potato Salad can also be made in a yogurt base for those who do not enjoy the taste of buttermilk. In any case, you'll love it and it's a great salad to dish out!
Ingredients
| Olive oil | 1 Cup (16 tbs) | |
| Parsley | 1 Cup (16 tbs), chopped | |
| 6 large cloves garlic, minced | ||
| Dry mustard | 1 Teaspoon | |
| 3/4 cup buttermilk or yogurt | ||
| Lemon juice | 1 | |
| Ground black pepper | 1 To taste | |
| 6 pounds, cooked, peeled and coarsely diced potatoes | ||
| Lemon peel | 1 Teaspoon, grated | |
| Sesame seeds | 2 Tablespoon | |
| Caraway seeds | 2 Tablespoon | |
| Salt | To Taste | |
Directions
Combine all ingredients but potatoes and mix thoroughly.
Stir in potatoes carefully and chill.
The longer the potatoes are mixed with the salad, the more they absorb the flavors of the dressing.
This is a good dish to make a day ahead.
The dressing is also good with other cold vegetables, like carrots or broccoli.
NOTE TO COOK: Carry to party in tightly covered plastic container or in serving bowl, well wrapped.
