Ingredients

 
Apricot halves - 1 can
 
Sugar - 1 cup
 
Flour - 1/4 cup
 
Salt - 1/2 tsp.
 
Mace - 1/4 tsp.
 
Cinnamon - 1/4 tsp.
 
Buttermilk - 2 cups
 
Eggs - 3, well beaten
 
Unbaked pie shell – 1-9-in.
 
Cornstarch - 4 tsp.
 
Orange marmalade - 1/3 cup

Directions

MAKING
1) Drain the apricots and keep aside 1 cup of juice.
2) In the top of a double boiler, add sugar, flour, salt, mace, cinnamon and buttermilk.
3) Stand over the boiling water and while stirring allow to cook till a smooth sauce.
4) Scoop out a small amount of the hot mix and add into the eggs.
5) Add the egg mix into the hot mixture.
6) Place back on the heat.
7) Continue to stir and cook till thick.
8) Add the buttermilk mix into the pie shell.
9) Place in the oven and bake at 325 degrees for 50 minutes, till the filling sets.
10) Remove from the oven and cool.
11) Add 1/4 cup of the reserved syrup and cornstarch and mix till smooth.
12) Boil the rest of the syrup and add into the cornstarch mix. Continue stirring.
13) Cook till the mix thickens.
14) Take off from the heat and add in the marmalade. Mix well.
15) Place the apricot halves, cut side down, over the pie.
16) Cover with glaze.

SERVING
17) Top with whipped cream and serve.
