3 cups sifted all-purpose flour
 
1/2 teaspoon baking powder
 
1/2 teaspoon baking soda
 
1/2 teaspoon salt
 
1 cup (2 sticks) butter or margarine, softened
 
2 cups superfine sugar
 
2 eggs
 
1 teaspoon vanilla
 
1 teaspoon lemon extract
 
1 cup buttermilk
 
Starfruit and strawberry slices for garnish (optional)
 
Lemon or orange zest for garnish (optional)

Directions

Preheat oven to 350°F Grease and flour 2 (9 x5-inch) loaf pans.
Combine flour, baking powder, baking soda and salt; set aside.
Beat together butter and sugar in large bowl until light and fluffy.
Add eggs, one at a time, beating well after each addition.
Blend in flavorings.
Add flour mixture alternately with buttermilk, beating well after each addition.
Pour evenly into prepared pans.
Bake 35 to 40 minutes or until wooden pick inserted in centers comes out clean.
Cool loaves in pans on wire racks 10 minutes.
Loosen edges and remove to racks to cool completely.
Garnish as desired.
