1 cup rolled oats
 
1 cup buttermilk
 
1 egg, unbeaten
 
1/4 cup warmed honey
 
1 cup whole wheat pastry flour
 
1/2 teaspoon salt
 
1 teaspoon soda
 
1/3 cup oil or melted butter

Directions

Soak oats in buttermilk for at least 1/2 hour.
Preheat oven to 425° F.
Beat egg into oat mixture.
Add honey and combine thoroughly.
Stir together flour, salt, and soda, making sure there are no lumps in the soda.
Stir into first mixture, then add oil or cooled melted butter and mix only until ingredients are combined.
Bake in buttered muffin tins for 15 to 20 minutes or until browned.
