| Yellow cornmeal | 1 Cup (16 tbs) | |
| Sugar | 1/4 Cup (16 tbs) | |
| Baking powder | 1 Tablespoon | |
| Salt | 1/2 Teaspoon | |
| 2 egg whites, lightly beaten | ||
| Buttermilk | 1 Cup (16 tbs) | |
| Unsweetened applesauce | 1/3 Cup (16 tbs) | |
Directions
Preheat the oven to 400°.
Lightly spray an 8" X 8" X 2" baking pan and set aside.
In a large bowl, stir together the flour, cornmeal, sugar, baking powder and salt.
Make a well in the center of the mixture.
In a small bowl, stir together the egg whites, buttermilk and applesauce.
Add the buttermilk mixture to the flour mixture and stir just until moistened.
Pour the batter into the prepared pan.
Bake about 25 minutes or until a toothpick inserted in the center comes out clean.
Serve warm.
