Buttermilk Cake Recipe

Ingredients

 
1/2 cup sifted cake flour
 
1/2 cup granulated sugar
 
1 tsp baking powder
 
1/2 tsp salt
 
1/4 tsp baking soda
 
2 tsp solid shortening, softened
 
1/4 cup buttermilk
 
2 egg whites
 
1 tsp vanilla

Directions

Sift together flour, sugar replacement, baking powder, salt, and baking soda into a medium-sized bowl.
Add shortening and 1/2 cup (125 mL) of the buttermilk.
Beat on medium for 2 minutes.
Add remaining buttermilk, egg whites, and vanilla.
Beat on high for 2 minutes.
Transfer batter into an 8 inch (20 cm) round well greased and floured baking pan.
Bake at 350°F (175°C) for 22 to 25 minutes or until pick inserted in middle comes out clean.
Cool in pan for 5 minutes.
Invert onto a cooling rack, and cool completely.
