Butterfly Shrimp Recipe

Ingredients

 1 1/2 pounds large shrimp, cleaned and deveined, leaving tails on
 Flour3/4 Cup (16 tbs)
 Baking powder1 Teaspoon
 Salt1/2 Teaspoon
 Milk3/4 Cup (16 tbs)
 Egg1 , beaten
 Fat for frying

Directions

Cut almost through shrimp lengthwise, spread out to form the butterfly.
This is a trick of the knife that gets easier as you go along.
Mix flour, baking powder, and salt with milk and beaten egg.
Stir until very smooth.
Heat fat in skillet.
Batter each shrimp, put into hot fat.
Fry until golden brown, about 7 minutes.
Drain cooked shrimp on paper towels.
Serve as is or with your favorite sauce.
