Butterflied Leg Of Lamb Recipe
The olive oil patted Butterflied Leg Of Lamb is extraordinarily juicy with fresh garlic flavor. The broiled meat is close to perfect everytime I serve my family. If you are a perfectionist and wanna make it right, oil your batter and prepare Butterflied Leg Of Lamb.
Ingredients
1/2 cup olive oil
Juice of 2 lemons
2 cloves garlic, chopped
Salt and fresh pepper
1 tablespoon chopped rosemary
6 pound leg of lamb, boned and butterflied
Directions
Mix olive oil, lemon juice, garlic, salt, pepper, and rosemary in a bowl.
Lay meat flat on a rack over a baking pan.
Brush with the oil mixture.
Place meat 4 inches from broiler.
Broil 10 minutes, baste, and broil 10 minutes longer.
Turn over, brush with oil mixture, and broil until done, basting every 10 minutes.
It takes 25-35 minutes to broil.
The meat is uneven and will give rare, medium, and well-done servings.
Carve on the diagonal into very thin slices.
