Buttered Potatoes Recipe

1/2 lb (225 g) bacon, cut into pieces
1/4 cup (60 ml) pearl onions
1 cup (250 ml) chicken stock
1 1/2 cups (375 ml) potatoes, cut into large cubes
1 tbsp (15 ml) parsley
1 bay leaf
Pinch of thyme
1 tsp (5 ml) garlic, finely sliced
Salt and pepper
1/4 cup (60 ml) butter
Directions
– In a stove-top casserole, melt the bacon and cook onions until transparent.
– Pour chicken stock over mixture. Add all other ingredients except butter, cover and cook 25 to 30 minutes.
– Remove from heat, add butter, cover and let stand for 10 minutes before serving.
