Ingredients
1 to 1 1/2 lb (500 to 750 g) fish fillets.
2 tbsp (30 mL) coarse salt
1/3 cup (80 mL) butter
Salt and pepper to taste
Grated rind of 1 lemon
1 tbsp (15 mL) fresh dill, chopped or
1/4 cup (60 mL) fresh parsley, minced
Directions
Place fish in a dish, cover with very cold water and the coarse salt.
Let stand 30 minutes to 2 hours.
This prevents the fish from drying during the cooking period and accentuates its flavor.
Remove the fish from water and dry thoroughly with paper towel.
Dispose of the water and salt.
Preheat a browning dish 6 minutes at HIGH.
Butter each fillet on one side.
Without removing dish from the oven, place fish in it, buttered-side down.
Micro wave 2 to 3 minutes at MEDIUM-HIGH.
Check for doneness with a fork.
Microwave 1 or 2 minutes more, if necessary.
Turn fillets, taking care not to break them.
Micro wave 1 minute at HIGH.
Remove fish to a hot dish, sprinkle with salt and pepper, lemon juice, dill or parsley, and to taste, some melted butter.
