Butter Wine Baked Fish Recipe

Ingredients

 
1 1/2 lbs. boneless fish fillets or steaks
 
2 cups dry sherry wine or white table wine
 
1/2 cup flour
 
2 tbs. butter or margarine
 
1 onion sliced
 
1/2 tsp. salt
 
1/8 tsp. pepper
 
1/8 tsp. Paprika

Directions

A half hour before cooking, place fish in a dish and pour over wine.
If not completely covered, turn the fish after 15 minutes.
Remove fish and save liquid for sauce.
Dust fish with flour.
In a heavy skillet with a cover, heat oil or butter and brown fish lightly on both sides.
Add onion, wine liquid, salt, pepper and paprika.
Cover and simmer 5 minutes.
Remove from heat but do not uncover for 5 minutes longer (to steam fish).
