Ingredients

 2 cubes butter, room temperature
 Sugar1/2 Cup (16 tbs)
 1 teaspoon vanilla or almond extract
 Flour1 Cup (16 tbs)
 1 1/2 cups oats, old fashioned or quick cooking

Directions

Preheat oven to 375 degrees.
Cream together butter, sugar, and vanilla or almond extract.
Gradually mix in flour and oats.
Drop by rounded teaspoonfuls two inches apart onto greased or parchment lined cookie sheets.
Flatten each cookie to 1/4 inch thickness with the bottom of a sugared glass.
Bake approximately 8 to 10 minutes or until edges are light brown.
Transfer cookies to cooling racks.
Dust with powdered sugar, if desired.
