Almonds Butter Cookies Recipe
Ingredients
| Butter/Margarine | 1/2 Pound | |
| Sugar | 3/4 Cup (16 tbs) | |
| Eggs | 2 , separated | |
| Grated rind and juice of 1/2 lemon | ||
| Rising flour | 4 Cup (16 tbs) | |
| 1/2 cup almonds, very finely chopped | ||
Directions
Pre-heat the oven to 350°F.
Cream the butter and sugar together in a large mixing bowl.
Add the egg yolks to the creamed mixture and beat well.
Then add the lemon rind and juice.
Add the flour and mix well, then chill the dough for 2 hours in the refrigerator.
Lightly beat the egg whites.
Grease a baking tray.
Roll out the dough to 1/4 inch thickness and cut into cookie shapes.
Brush each cookie with a little egg white, then sprinkle with a little extra sugar and the the chopped almonds.
Bake for 10-12 minutes, then cool on a wire rack.
