 Butter beans2 Can (10oz)
 2 tablespoons olive or salad oil
 Lemon juice1/3 Cup (16 tbs)
 Parsley1/2 Cup (16 tbs), minced
 Green onions1/2 Cup (16 tbs), thinly sliced
 Tomatoes2 Large, diced
 Pepper1 Teaspoon
 1/3 cup packed feta cheese
 1 or 2 green onions, ends trimmed

Directions

Drain beans, rinse with cool water, and drain well.
In a bowl, mix beans with oil, lemon juice, parsley, sliced green onions, tomatoes, and enough pepper to make salad slightly hot to taste.
If made ahead, cover and chill up to 4 hours; mix and continue.
Crumble cheese onto salad; garnish with the whole onions.
