Butter Bean Salad Recipe
Ingredients
| Butter beans | 2 Can (10oz) | |
| 2 tablespoons olive or salad oil | ||
| Lemon juice | 1/3 Cup (16 tbs) | |
| Parsley | 1/2 Cup (16 tbs), minced | |
| Green onions | 1/2 Cup (16 tbs), thinly sliced | |
| Tomatoes | 2 Large, diced | |
| Pepper | 1 Teaspoon | |
| 1/3 cup packed feta cheese | ||
| 1 or 2 green onions, ends trimmed | ||
Directions
Drain beans, rinse with cool water, and drain well.
In a bowl, mix beans with oil, lemon juice, parsley, sliced green onions, tomatoes, and enough pepper to make salad slightly hot to taste.
If made ahead, cover and chill up to 4 hours; mix and continue.
Crumble cheese onto salad; garnish with the whole onions.
