Busy Day Spinach Soup Recipe

Ingredients
| Frozen chopped spinach package | 1 | |

| 2 tblsp. butter or regular margarine | ||
| Onion | 1 Tablespoon, grated | |
| Flour | 1 1/2 Tablespoon | |
| 1 tblsp. chicken bouillon granules | ||
| Salt | 1/2 Teaspoon | |
Directions
Place frozen spinach in 2-qt. glass casserole.
Cover and microwave at high setting 7 minutes, or until tender, rotating dish onequarter turn after 4 minutes.
Combine spinach and its liquid with 1 c of the milk in blender.
Puree until smooth.
Place butter and onion in same casserole.
Microwave at high setting 1 minute, or until butter is melted.
Stir in flour.
Slowly stir in remaining 2 c. milk.
Add pureed spinach mixture, bouillon granules and salt.
Microwave at high setting 8 minutes, or until mixture comes to a boil and thickens, stirring every 2 minutes.
