Busy Bee Bran Muffins Recipe

Ingredients

 
3 eggs
 
1/2 cup (120 ml) salad oil
 
1/2 cup (120 ml) honey
 
3 1/2 cups (840 ml) 100% bran cereal
 
1 1/2 cups (355 ml) skim milk
 
2 1/4 cups (600 ml) flour
 
1 tsp (5 ml) cinnamon
 
4 tsp (20 ml) baking soda
 
1/2 cup (120 ml) seedless raisins or chopped dried fruit, optional

Directions

In small bowl, blend together eggs, oil and honey.
In large mixing bowl, combine bran with milk and let stand 5 minutes.
Add egg mixture to cereal and blend lightly.
Mix in flour, cinnamon and soda.
Add raisins, if desired.
Spoon into paper-lined or greased muffin pan cups.
Bake at 350°F (180°C) 25-30 minutes.
