Real Texas Breakfast Burrito Recipe Video
It’s a complete breakfast wrapped up in a tortilla.
Ingredients
Flour Tortillas (usually 2 burritos per person if the tortilla is small)
Eggs, scrambled (1/2 to 1 egg per tortilla)
Fresh Bacon Bits
Cut up roasted Pablano Pepper (you can use any style roasted pepper)
shredded Jalapeno or cheddar cheese
Directions
Heat a flat cooking pan, can be cast iron on the stove top at medium heat. Place a tortilla in the pan. Turn and keep turning until changes color, but not burnt. A little golden is best, keeps the tortilla soft to roll. Note: If you over cooked the tortilla, it will turn crunchy and will not roll. Put the warmed tortillas in a tortilla warmer, or you can use a dish towel folded in half and tortillas bundled in between. After you have your tortillas warmed, set aside.
Cook the chopped bacon, place in a bowl and keep warm. Scramble the eggs, place in bowl and set aside. I usually have my peppers already roasted and frozen. If you don’t already have them roasted, you will need to do this step first because it will take time.
Once you have all your ingredients prepared it’s time to assemble the Breakfast Burrito! Note: You can put anything in your Breakfast Burrito, just don’t fill too much because you still need to roll. Put your ingredients in the center of the tortilla, but not all the way to the edges on the sides. Start with the scrambled egg, then meat, chili pepper and top with shredded cheese. To roll, you will want to move your ingredients a little away from the center of the tortilla closer to you. Roll the tortilla over the top (there should still be tortilla left visible that hasn’t got anything on it, like a flap). Fold in the 2 sides and roll the tortilla containing the filling. This should hold the flap down. Place on a plate and continue rolling your Breakfast Burritos.
When all of your Breakfast Burritos are finished. Place in microwave for approximately 30 – 60 seconds or until when you touch the top Breakfast Burritos, they are hot to the touch. You can smother with Salsa, or Picante Sauce, or a sauce that you like and enjoy! If you don’t want to smother or are on the run, fold a piece of foil around to keep heat in and not spill your filling, and eat!
