Burgundy Burgers With Roquefort Recipe

8 pounds ground beef chuck
 
1 cup chopped parsley
 
1 cup chopped green onion
 
2 1/2 tablespoons salt
 
1/2 teaspoon pepper
 
1 bottle (4/5 quart) dry red wine
 
24 squares Roquefort or blue cheese (about 12 oz.)

Directions

Mix together the ground chuck, parsley, and the green onion; season with salt and pepper.
Shape into 24 patties, making a depression in the center of each one.
Place in a shallow pan and pour wine over patties, pouring into the depressions.
Chill 2 hours or longer.
Remove meat patties from marinade and broil over medium hot coals, for 8 to 10 minutes for medium rare.
