Burgundy Brisket Recipe

Ingredients
1 4-pound beef brisket
4 stalks celery, chopped
4 carrots, chopped
2 cloves garlic, chopped
1 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups California Burgundy or other dry red wine
Directions
Brown brisket quickly on both sides in a skillet with a little oil.
Place it in crock cooker along with the remaining ingredients.
Cook at Low for 9 to 11 hours.
Remove the meat from the crock.
Spoon vegetables into a blender and puree, or press through a sieve or strainer.
Return pureed vegetables to broth.
Thicken broth, if necessary, with a little flour and butter mixed together, cooking on High.
Slice brisket thinly, and serve with sauce spooned over it.
