Burgundy Beef Loaf Recipe

Ingredients

1 tablespoon vegetable oil
1/2 cup chopped green pepper
2 tablespoons chopped onion
1 can pineapple slices in syrup
Syrup reserved from crushed pineapple
4 teaspoons cornstarch
3/4 cup water
1 chicken bouillon cube
1 tablespoon brown sugar
1/4 teaspoon dried leaf tarragon
2 tablespoons vinegar
1 tablespoon soy sauce
2 tablespoons diced pimiento

How to make Burgundy Beef Loaf

1. Heat vegetable oil in saucepan. Add green pepper and onion; cook 2 minutes.
2. Drain syrup from pineapple slices and add to saucepan with syrup reserved from the crushed pineapple in stuffing.
3. Blend cornstarch with water; add to saucepan.
4. Add bouillon cube, brown sugar, tarragon, vinegar and soy sauce. Cook, stirring constantly, until mixture thickens and comes to a boil.
5. Cut pineapple slices in half; add to sauce with pimiento. Heat and serve over chicken breasts.
