Ingredients

Red Pepper Aioli

½ c fat free mayonnaise

2 cloves of garlic

2 t smoked paprika

2 roasted (or fresh) piquillo peppers

Burgers

2/3 pound ground meat (you can use turkey, beef or even bison)

Canola oil

Salt/pepper

2 slices of prosciutto ham – cut in half (Bobby uses Serrano ham but I couldn’t find it. Prosciutto is a good substitute – a bit salty and delish. Find it at your deli counter.)

4 slices of manchego cheese

Buns

Steak Fries

2 potatoes – red or russets work well

Olive oil

Salt/pepper

Directions

GETTING READY
1) Preheat grill on high.
2) In a food processor container, combine all ingredients and leave for 30 minutes to make red pepper aioli.

MAKING
3) Shape the meat into pattie and make a depression in the center of each.
4) Apply oil on each side and season it generously.
5) Put the pattie on grill with depression side up and close the lid.
6) Cook on high for 4 minutes and flip. Cook for 3 more minutes or until done.
7) Place a cheese slice about two minutes before the pattie is done.
8) Take a bun and spread the bottom with aioli and put half slice of prosciutto, cheese, patty and other half slice of prosciutto, aioli and top it with bun top.
9) Brush the top with oil and grill it for a minute. Flip burgers and cook for a minute until crisp and brown.
10) To make steak fries, microwave potatoes for 5-7 minutes until soft.
11) Cut them into wedges and coat with olive oil generously.
12) Season them and place on grill parameter and cook for 4 minutes on high.
13) Oil the potato tops and flip them. Cook for 4 minutes more until crisp and hot.

SERVING
14) Serve the burgers with steak fries and red pepper aioli and enjoy.
