1/2 tablespoon active dry yeast
 
2 tablespoons warm water (105°-115°F)
 
1/3 cup milk
 
2 tablespoons sugar
 
1/4 teaspoon salt
 
4 tablespoons unsalted butter
 
2-2 1/2 cups flour
 
1 egg
 
1 teaspoon grated lemon peel
 
1/4 teaspoon ground mace

Confectioners' Icing, if desired

Directions

1 Dissolve yeast in warm water. Set aside for 5 minutes. Heat milk, sugar, salt, and butter to warm (105°-115°F).
2 Add 2 cups flour, egg, lemon peel, and mace. Mix thoroughly.
3 Add enough remaining flour to make a soft dough. Knead on lightly floured surface until smooth€”about 10 minutes.
4 Place in greased bowl, turning to coat top. Cover; let rise in warm place until double€”about 1 hour.
5 Punch down dough. Divide into 12 equal pieces. From each piece roll an 18-inch strip of dough. Out of this, coil up a 10-inch strip for body, a 5-inch strip for head, and two 1-inch strips (make pointed) for ears. Roll remaining 1-inch strip into a ball for tail. Put in 1 currant for eye (rabbit is portrayed in side view).
6 Place on greased baking sheet. Cover; put in warm place until double€”about 30 minutes.
7 Bake in a preheated 375°F oven 10€”15 minutes or until done. Cool on wire rack.
8 If desired, frost with Confectioners' Icing.
