Ingredients

 3 pounds fish, cleaned, boned, and cut into pieces
 Water2 Quart
 Onion1 , sliced
 Celery1/2 Cup (16 tbs), chopped
 Bay Leaf1
 Parsley2 Tablespoon, chopped
 Dried thyme1/2 Teaspoon, crumbled
 Milk1 Cup (16 tbs)
 2 tablespoons butter or other fat
 Salt To Taste
 Pepper To Taste

Directions

Combine all ingredients in a large kettle.
Bring mixture to a boil and lower heat.
Cover, and simmer until fish falls to pieces.
