Bulk Chorizo Filling Recipe
Ingredients
| Onion | 1 Large, finely chopped | |
| Lean ground beef | 1 pound | |
| 1/2 pound lean ground pork | ||
| 2 teaspoons each chili powder and oregano leaves, crumbled | ||
| Ground cumin | 1/2 Teaspoon | |
| Ground cinnamon | 1/4 Teaspoon | |
| Salt | 1 Teaspoon | |
| 1/2 teaspoon liquid hot pepper seasoning (optional) | ||
| Vinegar | 5 Tablespoon | |
| 1 1/2 cups canned enchilada sauce | ||
Directions
Combine onion, ground beef, ground pork, chili powder, oregano, cumin, cinnamon, salt, hot pepper seasoning (if used), and vinegar.
In a wide frying pan over medium-high heat, brown meat mixture lightly, breaking it apart as it cooks.
Add enchilada sauce and boil rapidly, uncovered, until liquid is gone.
Skim off accumulated fat.
