Bulgur With Red Onion Recipe
Ingredients
| Bulgur | 2 1/2 Cup (16 tbs) | |
| 2 medium red onions, coarsely chopped | ||
| Vegetable oil | 3/4 Cup (16 tbs) | |
| Sesame oil | 4 Teaspoon | |
| Ground coriander | 1 Teaspoon | |
| Lemon juice | 7 1/2 Tablespoon | |
| Ground cumin | 1 Teaspoon | |
| 1/2 cup plus 2 tablespoons finely chopped fresh mint | ||
| Ground black pepper | To Taste | |
| Minced parsley | 1 1/2 Cup (16 tbs) | |
| Fresh mint leaves for garnish | ||
Directions
Soak bulgur in water to cover for 15 minutes.
Drain in colander and then squeeze bulgur to drain out as much moisture as possible.
Combine remaining ingredients and whisk.
Pour over bulgur and mix to coat.
Allow to stand at room temperature at least 1 hour before serving Or refrigerate but return to room temperature before serving.
NOTE TO COOK: Carry to party in serving bowl or storage container.
Carry mint leaves separately and decorate bulgur at party.
