Bulgur Pilaf Recipe
This bulgur pilaf is a nutritious and easy pilaf recipe. Cooked with plain bulgur, the pilaf is prepared with added vegetables and herbed with thyme. Seasoned to taste, it can be served with a side of choice.
Ingredients
1 tablespoon unsalted margarin
1 small yellow onion, chopped fine
2/3 cup bulgur
2 cups water or low sodium chicken broth
1 medium size carrot, peeled and chopped fine
1 medium size stalk celery, chopped fine
1/2 teaspoon dried thyme, crumbled
1/8 teaspoon black pepper
Directions
In a medium size heavy saucepan, melt the margarine over moderate heat.
Add the onion and cook, uncovered, until soft about 5 minutes.
Add the bulgur and cook, stirring, for 1 minute.
Add the water, carrot, celery, thyme, and pepper.
Bring to a simmer, reduce the heat to low, cover, and cook for 15 minutes or until all the liquid is absorbed.
