Bulgarian Borscht Recipe

Ingredients
2 T corn germ oil
2 onions, chopped
4 beets, grated
1 carrot, grated
4 c beet water and stock
1 head cabbage, shredded
1/2 t dill
1 t vege-salt
2 T miso
1/2 c yogurt
Directions
Saute onions in oil until golden, then add beets and carrots, cooking lightly.
Combine with stock in a covered saucepan and simmer for 15 minutes.
Add cabbage, cooking until tender or about 10 minutes.
Add dill, salt, and miso.
Remove from heat and stir in yogurt.
