Buffet Lemon Cheesecake Recipe

This Buffet Lemon Cheesecake is just unbeatable! Very simple and also easy to make, the feel of biting into the softened cream cheese wrapped in lemon flavored gelatin is exceptional. Give it a try and you would just go crazy for more!

Ingredients

 
1 1/4 cups graham cracker crumbs
 
3 tablespoons sugar
 
1/3 cup butter or margarine, melted
 
2 packages (8 ounces each) cream cheese, softened
 
4 cups cold milk
 
2 packages (4-serving size) JELL-O® Lemon Flavor Instant Pudding and Pie Filling

Directions

Combine crumbs, sugar and butter; mix well.
Press firmly on bottom and side of 9- or 10-inch springform pan.
Bake in preheated 350° oven for about 8 minutes, or until lightly browned.
Cool on wire rack.
Place cream cheese in large bowl.
With electric mixer at medium speed, beat until smooth.
Gradually add 1 cup of the milk, blending until mixture is very smooth.
Add remaining milk and the pudding mix.
Beat at low speed just until well blended, about 1 minute.
Pour carefully into crumb-lined pan.
Chill until firm, about 3 hours.
Garnish with lemon slice and mint, if desired.

it is obviously instant pudding. you need it for the jelling capapbilities. i see nothing in the recipe about plain old jello????? maybe it was corrected.
