 450 g lean ground buffalo meat
 120 g ground pork, fatty
 Egg1 (BURGERS:)
 30 ml fine bread crumbs
 Onion30 Milliliter, minced (BURGERS:)
 Dijon Mustard15 Milliliter (BURGERS:)
 Worcestershire sauce5 Milliliter (BURGERS:)
 Oil45 Milliliter (SAUCE:)
 Onion60 Milliliter, minced (SAUCE:)
 Green pepper60 Milliliter, minced (SAUCE:)
 Celery60 Milliliter, minced (SAUCE:)
 750 ml tomatoes, peeled, seeded, chopped
 15 ml hickory smoked salt
 Wine vinegar45 Milliliter (SAUCE:)
 Hot mustard3 Milliliter (SAUCE:)
 Tomato Paste80 Milliliter (SAUCE:)
 3 ml each of basil, thyme, oregano, savory, paprika, garlic powder, pepper

Directions

BURGER: Place all the ingredients in a large mixing bowl and blend thoroughly.
Form into patties, and place onto a baking sheet covered with wax paper.
Cover with wax paper, and refrigerate until required.
SAUCE: Heat the oil in a sauce pan, add the vegetables and saute until tender.
Add all of the remaining ingredients, reduce heat and simmer until liquid reaches one third its original volume.
Grill the burgers over medium heat brushing with sauce frequently.
Serve hot with extra sauce on your kaiser rolls.
