Buckwheat Groats Stuffing For Suckling Pig Recipe

| 1 1/2 cups cooked buckwheat groats | ||
| Suckling pig liver, lungs, heart and kidneys, chopped fine | ||
| 1/4 lb. salt pork with the rind removed, chopped fine | ||
| 2 medium-sized onions, finely chopped and sauteed in butter until soft but not brown | ||
| Egg | 1 | |
| Grated nutmeg | ||
| Marjoram | 1/4 Teaspoon | |
| Stock | 1/2 Cup (16 tbs) | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Combine the meats and salt pork with the sauteed onions, egg, seasoning and spices.
Add this mixture to the groats and mix thoroughly.
