Brussels Sprouts Aegir Recipe
Ingredients
| Brussels sprouts | 450 Gram | |
| Butter | 125 Milliliter | |
| Egg yolks | 2 | |
| Lemon juice | 10 Milliliter | |
| English mustard | 5 Milliliter | |
| Cayenne pepper | 1 Pinch |
Directions
GETTING READY
1) Remove the stem end and any wilted leaves of sprouts.
MAKING
2) Put them in boiling salted water and cook for 10 minutes.
3) Allow butter to melt to very hot.
4) In the meantime, in a double boiler, heated over low heat, place egg yolks and mix in lemon juice and mustard thoroughly.
5) Beat constantly and cook the sauce until it becomes thick and creamy.
6) Immediately take off the sauce from heat and gradually beat in melted butter.
7) Mix in cayenne.
8) On a serving platter, place the sprouts and pour over the sauce.

9) Serve immediately.
