Bruschetta with Tomato and Basil Recipe
Ingredients
| 1 ciabatta loaf, sliced into 2.5 cm slices | ||
| Red onion | 1 Large, finely chopped | |
| Garlic | 1 Clove (5gm), crushed | |
| Extra virgin olive oil | 2 Tablespoon | |
| Juice of 1/2 lemon | ||
| 1 small red chilli, very finely chopped | ||
| Basil | 1 Cup (16 tbs) | |
| Tomatoes | 8 Medium, deseeded | |
Directions
Start by toasting the ciabatta, either under a grill, in the oven or in a toaster.
In a large mixing bowl mix the onion, garlic, olive oil, lemon juice and chilli.
Now take the basil leaves, roll them up together, almost like a cigar, and slice.
Add these to the bowl, then add the chopped tomatoes.
To serve, top each ciabatta slice with some of the mix.
