Bruschetta With Basil Mozzarella & Tomatoes Recipe
Ingredients
| 1 large French baguette, sliced into 1/4 inch slices | ||
| 1 large bunch basil, washed and chopped, stems discarded | ||
| 1/2 pound fresh mozzarella, diced small | ||
| 4 tomatoes, seeded and chopped (plum tomatoes work well) | ||
| Garlic | 2 Clove (5gm), minced | |
Directions
Grill or toast bread, turning once until it is golden brown.
Store in an airtight container until ready to use.
In a bowl, combine basil, mozzarella, tomatoes, garlic, salt and pepper.
Brush the toast with a little olive oil.
Spoon the tomato-basil mixture onto the oiled side of the toasts and drizzle any remaining olive oil over them.
Broil for 3 to 5 minutes until the cheese is melted.
