Bruschetta With Basil Mozzarella & Tomatoes Recipe

 1 large French baguette, sliced into 1/4 inch slices
 1 large bunch basil, washed and chopped, stems discarded
 1/2 pound fresh mozzarella, diced small
 4 tomatoes, seeded and chopped (plum tomatoes work well)
 Garlic2 Clove (5gm), minced

Directions

Grill or toast bread, turning once until it is golden brown.
Store in an airtight container until ready to use.
In a bowl, combine basil, mozzarella, tomatoes, garlic, salt and pepper.
Brush the toast with a little olive oil.
Spoon the tomato-basil mixture onto the oiled side of the toasts and drizzle any remaining olive oil over them.
Broil for 3 to 5 minutes until the cheese is melted.
