Bruschetta Recipe
This bruschetta is a flavorful tomato bruschetta herbed with basil. Prepared with sliced baguette, broiled to a lovely golden color, it is topped with the tomato mix and makes an excellent brunch addition!
Ingredients
1 can (14 1/2 ounces) Italian Style Stewed Tomatoes
1 to 2 cloves garlic, crushed
2 tablespoons chopped fresh basil or 1/2 teaspoon dried basil
1 baguette (6 inches) French bread, cut into 1/2 inch slices
1 tablespoon olive oil
Directions
Drain tomatoes, reserving liquid.
In small saucepan, boil reserved liquid with garlic, 5 to 6 minutes, stirring occasionally.
Remove from heat.
Chop tomatoes; combine with garlic mixture and basil.
Brush bread with oil.
Broil until golden.
Top with tomato mixture; serve immediately.
Garnish with basil leaves, if desired.
