Onion- 1, minced

Lima beans- as required
 
Ears corn- 6
 
Salt pork- 1/2 pound

Sugar- 2 teaspoons
 
Tomatoes- 4 cups, sliced
 
Butter- 1/2 pound

Directions

GETTING READY
1.Start by cutting the squirrel into serving pieces
MAKING
2.In a pot, pour 4 quarts of water let it boil
3.Then add salt to the water while boiling
4.Also add onion, Lima beans, corn cut from the cob, pork, potato, pepper, and the squirrels
5.Cover the pot and simmer for 2 hours
6.Then add sugar and tomato, and simmer 1 hour more
7.Add butter cut into pieces the size of a walnut and rolled in flour to the pot just 10 minutes before removing from heat
8.Bring to a boil
SERVING
9.Serve in soup plates along with cornbread
TIPS
The characteristic Brunswick stew is made with squirrels. Chickens and rabbits are frequently used today in place of squirrels.
