Mom'S Brunswick Stew Recipe
Ingredients
| Salt | 2 Tablespoon | |
| Pepper | 1 Teaspoon | |
| Frying chickens (3 1/2 pounds each)-4, cut up | ||
| Shortening | 1/2 Cup (16 tbs) | |
| Onions | 4 Cup (16 tbs), chopped | |
| Water | 2 1/2 Quart | |
| Tomatoes-9 1/3 cups (four 1-pound, 3-ounce cans) | ||
| Worcestershire | 1/4 Cup (16 tbs) | |
| Lima beans package | 4 , frozen | |
| Okra- 4 cups (two 1-pound cans) | ||
| Frozen corn package | 4 | |
| Dry bread crumbs | 2 Cup (16 tbs) | |
Directions
GETTING READY
1. Season the chicken well
2. In a large pan, heat the shortening and add the chicken to the pan. Brown the chicken in batches till completely browned all over
3. Set the chicken aside to cool
MAKING
4. In the same pan, add the onion and brown it in the drippings.
5. Add the onion to the chicken, along with the water, tomato and the Worcestershire sauce.
6. Cover the pan and bring it to the boil with the beans and the okra. Simmer the mixture for 10 minutes till done
7. Cover with the crumbs. Season the mix till the chicken is done.
SERVING
8. Serve hot immediately
