Brunch Enchiladas Recipe

| Green onions | 2 Small, thinly sliced | |
| 1/3 cup chopped red or green bell pepper | ||
| Ripe olives | 1/2 Cup (16 tbs), chopped | |
| 8 corn tortillas (6-inch) | ||

Directions
In small bowl, combine 1 cup Cheddar cheese, ham, green onions, bell pepper and chopped olives.
Soften tortillas according to package directions.
