Brunch Eggs Over Toast Recipe
Ingredients
| 3 large green bell peppers, seeded and coarsely chopped | ||
| 6 large onions, coarsely chopped | ||
| Garlic | 2 Clove (5gm), finley minced | |
| Bacon | 1 pound, diced | |
| Flour | 1 Tablespoon | |
| 1 pound Longhorn cheese, grated | ||
| Tomatoes | 1 Can (10oz), undrained | |
| Jalapenos | 1/2 Can (10oz), undrained | |
| 1 dozen hard cooked eggs, cut into eighths | ||
| Toast rounds or Ritz crackers | ||
Directions
Saute peppers, onions, and garlic in bacon drippings.
Remove; add flour to drippings.
Stir until smooth.
Add juices, tomatoes, and cheese.
Add eggs, bacon, and jalapenos; stir gently.
Serve over toast or crackers.
