 3 large green bell peppers, seeded and coarsely chopped
 6 large onions, coarsely chopped
 Garlic2 Clove (5gm), finley minced
 Bacon1 pound, diced
 Flour1 Tablespoon
 1 pound Longhorn cheese, grated
 Tomatoes1 Can (10oz), undrained
 Jalapenos1/2 Can (10oz), undrained
 1 dozen hard cooked eggs, cut into eighths
 Toast rounds or Ritz crackers

Directions

Saute peppers, onions, and garlic in bacon drippings.
Remove; add flour to drippings.
Stir until smooth.
Add juices, tomatoes, and cheese.
Add eggs, bacon, and jalapenos; stir gently.
Serve over toast or crackers.
