 All purpose flour8
 Baking powder1 Teaspoon
 Salt3⁄4 Teaspoon
 Shredded monterey jack cheese with jalapeno pepper8 Ounce (2 Cups)
 Small curd cottage cheese12 Ounce (1 1/2 Cup)
 Shredded sharp cheddar cheese4 Ounce (1 Cup)
 Jalapeno pepper1 , seeded and chopped
 Hot pepper sauce1⁄2 Teaspoon
 Salsa1⁄2 Cup (8 tbs)


Preheat oven to 350°F.
Grease 9-inch square baking pan.
Beat eggs in large bowl at high speed with electric mixer 4 to 5 minutes or until slightly thickened and lemon colored.
Combine flour, baking powder and salt in small bowl.
Stir flour mixture into eggs until blended.
Combine Monterey Jack cheese, cottage cheese, Cheddar cheese, jalapeno and hot pepper sauce in medium bowl; mix well.
Fold into egg mixture until well blended.
Pour into prepared pan.
Bake 45 to 50 minutes or until golden brown and firm in center.
Let stand 10 minutes before cutting into squares to serve.
