Ingredients

 
1/2 cup all purpose flour
 
1/2 teaspoon salt
 
1/4 teaspoon pepper
 
1/8 teaspoon dry mustard
 
1 broiler fryer chicken (3 to 3 1/2 pounds), cut up, backbone and wing tips removed
 
2 tablespoons lemon juice
 
2 tablespoons vegetable oil
 
2 tablespoons butter
 
Paprika

Directions

Combine flour, salt, pepper, and mustard in paper bag.
Brush chicken with lemon juice.
Add chicken to seasoned flour in batches and shake to coat well.
Shake off excess flour.
Preheat microwave browning dish according to manufacturer's directions.
Add oil and butter to dish.
Arrange chicken, skin-side down, on browning dish; do not crowd.
Cover lightly with waxed paper.
Cook on HI, 4 minutes.
Turn chicken over.
Sprinkle with paprika.
Cover and cook on HI, 5 minutes.
