Brownie Chip Cuffins Recipe

Brownie chip muffins or brownie chip cuffins as we call them gives you the delight of a brownie in a muffin recipe. Sinfully baked with coffee, cinnamon and brown sugar, these muffins also have the flavor of ripe bananas. The vanilla and the coffee packs a punch that will land this recipe in your permanent collection!

Ingredients

 
1/2 cup butter 125 mL
 
2 eggs
 
11/2 cups packed light brown sugar 375 mL
 
11/2 tsp vanilla 7mL
 
1 tbsp strong black coffee 15 mL
 
1 tsp cinnamon 5mL
 
1 mashed ripe banana
 
l cup all-purpose flour 250mL
 
1 cup white chocolate chips(optional) 250 mL

Directions

In a small saucepan over low heat, melt chocolate with butter, stirring gently.
Set aside to cool.
In a large bowl, whisk together eggs, sugar, vanilla, coffee and cinnamon.
Add mashed banana and drizzle with chocolate, stirring lightly.
Add flour, stirring just until moistened and blended.
Fold in chocolate chips.
Spoon batter into prepared muffin tin, filling cups three-quarters full.
Bake in preheated oven for 20 to 25 minutes or until a toothpick inserted in the center comes out dry and clean.
