2 or 3 medium potatoes
 
2" boiling salted water

Directions

Pare 2 or 3 medium potatoes.
Cook in 2" boiling salted water about 20 min., until almost done.
Drain.
Add to roast last 30 min.; turn potatoes to brown evenly.
