Ingredients

 
3 tablespoons butter or margarine
 
3 tablespoons all-purpose flour
 
1 cup milk
 
4 or 5 medium-sized potatoes (cooked, peeled, and diced or thinly sliced)
 
1 tablespoon minced parsley
 
1 teaspoon salt
 
1/4 teaspoon pepper
 
3/4 cup shredded sharp Cheddar cheese
 
Parsley sprigs for garnish

Directions

In a saucepan melt butter, add flour, and cook, stirring, until well blended and bubbly.
Pour in milk all at once and cook, stirring constantly, until thick.
Add potatoes and minced parsley to the sauce.
Cook on low heat, stirring occasionally, for about 5 minutes, or until mixture is fairly stiff.
Season with salt and pepper.
Turn into a well-greased 5 by 9-inch loaf pan, press down firmly, and refrigerate several hours or overnight.
Half an hour before serving, turn loaf out onto an oven-proof platter or pan and sprinkle with the cheese.
Bake in a 375° oven until golden brown, about 30 to 40 minutes.
Garnish with parsley sprigs.
