1/4 cup light-brown sugar, packed
 
1/4 cup sifted all-purpose flour
 
2 tablespoons butter or margarine
 
2 teaspoons ground cinnamon
 
Batter:
 
1-1/3 cups sifted* all-purpose flour
 
1-1/2 teaspoons baking powder
 
1/2 teaspoon salt
 
1/4 cup butter or regular margarine, softened
 
1/2 cup light-brown sugar, packed

Sift before measuring.

Directions

Preheat oven to 375F.
Lightly grease bottoms of 12 (2-1/2-inch) muffin-pan cups.
Make Topping: In small bowl, combine topping ingredients; mix until crumbly.
Make Batter: Sift flour with baking powder and salt.
In large bowl of electric mixer, at medium speed, beat butter until fluffy.
Beat in brown sugar, then egg until very light and fluffy.
At low speed, blend in milk, then flour mixture, just until combined.
Divide evenly into muffin cups.
Sprinkle topping over each muffin.
Bake 15 to 18 minutes, or until cake tester inserted in center comes out clean.
Cool slightly in pan on wire rack.
Gently remove from pan.
Serve warm.
Makes 12.
