| Brown meat stock- 1 cup | ||

Directions
MAKING
1.In a pan, brown the onion in fat
2.Now add flour and make a brown roux
3.Also pour in the brown stock and cook, make sure to keep stirring constantly until the sauce thickens
4.Now strain the mixture to remove the particles of onion
5.Season with pepper and salt
SERVING
6.Serve with steak, fish, cutlets any kind of meat
TIPS
If the roux was not sufficiently brown to make the sauce a desirable color, a few drops of vegetable flavoring or of Worcestershire sauce may be added. If a more highly flavored sauce is desired, add a slice of carrot, a sprig of parsley, a little thyme and a few peppercorns to the onion, and brown in the fat.
