Brown chicken Recipe
Ingredients
1 3-pound chicken
2 or 3 small slices salt pork
2 tablespoons flour
2 cups boiling water
1 teaspoon onion juice, if desired
Salt and pepper
Directions
Cut into pieces as for white fricassee.
Place salt pork in a frying pan; when hot, brown chicken, turning frequently.
Add flour to fat, stir well and cook 2 minutes.
Add boiling water.
When gravy is smooth and boiling replace chicken, season with salt and pepper, cover and simmer gently until chicken is tender.
Add a teaspoon of onion juice, if desired.
Fat from any smoked meat may be used instead of salt pork.
If desired, top with biscuits cut into 1 inch squares, strips or diamonds.
Bake at 450° F.for 12 minutes.
